‘Gulfood’ is all that we hear in Dubai now! As one of the world’s biggest F&B and hospitality trade shows is successfully happening at Dubai World Trade Centre (DWTC), we decided to experience the show in its fullest spirit with our students and took a team stroll through the event. Spread over 1.29 million sq ft of indoor exhibition space, the place was spectacularly packed with people and stalls from around the world.
If the junior batch of diploma students were looking at everything with curiosity, then it was more of an experienced approach we saw in their seniors. We could sense the enthusiasm among the new comers and the excitement among the senior batch to see and cheer their fellow batch mates and their Chef instructors who were a part of the, Emirates Culinary Guild Salon Culinaire show for upcoming talents. It was indeed a treat to the eyes to see sugar art centre pieces, chocolate sculpture and bread displays done by participants for the other competitions.
One of the best things we experienced on this visit was the much talked about molecular gastronomy with liquid nitrogen demonstrated by Muddle Me. We were in awe to see and feel the chemical reactions happening with food and then tasting the same. If that was one technology which left us with our jaws dropping then there was more to know from Electrolux about Sous-vide packing technology for long term food storage. Also, we had our Chef Ashwini Kumar, Instructor at ICCA Dubai with some interesting demos on induction cooking with Zanussi Professional.
It was another moment filled with excitement for the students when we bumped into Chef Bernd Uber, a renowned culinary educator and international culinary judge, an awardee of the “Black Hat”, and then Chef Uwe Micheel, President of Emirates Culinary Guild and Chef Andreas Kurfurst, Vice President of Emirates Culinary Guild and also a multiple record holder, with whom our students got an opportunity to share some frame space. Again, we had some catching up moments with Chef Daniel Hiltbrunner, Master Chef Instructor at ICCA Dubai and one of the members of the Salon Culinaire judging panel.
Pushing ourselves through the crowd from one stall to another, we managed to see and enjoy every bit of the event regardless of the miles walking we had to do, to cover that entire exhibition area. At the end of our educational tour, we were glad to see some overwhelmed faces among our students, fascinated by the world of culinary and its most innovative technologies.
