Mint Week: Watermelon and Mint Salad

Mint, one of the most aromatic and delicious herbs around is used in a myriad of ways. With a high antioxidant capacity and innumerable health benefits it is no less than a wonder herb.

Its medicinal properties relive a number of ailments and it is also used in the confectionary industry besides being the most loved and versatile green in the kitchen.

It is an ideal ingredient to keep you refreshed this summer.

Watermelon and Mint Salad

Ingredients and Quantity

  • 1 bunch fresh  mint
  • 1/4kg Saudi feta cheese
  • 500g cubed watermelon

Method of Preparation

  • Roughly chop mint, keep aside in a bowl.
  • Roughly cube the feta cheese, or simply crumble them (a more rustic touch!)
  • Place the melon  in a serving dish, followed by the feta, and finally sprinkle a generous amount of mint.
  • You may add roasted walnuts to provide a different texture to the salad.
